About the Recipe
Make your dinner special with a quick and easy Caprese Bruschetta, featuring the rich flavor of Co’Day Philippines Superior Camellia Oil. This delightful appetizer serves 15 and combines fresh mozzarella, juicy grape tomatoes, and sweet mango on toasted baguette slices, topped with fresh basil and a drizzle of balsamic glaze.

Ingredients
1 Baguette Sliced
4 oz fresh mozzarella (cubed)
1 cup grape tomatoes (can use cherry tomatoes instead, washed and cubed)
1-2pcs fresh mango (cubed)
2 tbsp CO’DAY Superior Camellia Oil
¼ tsp garlic salt
10 leaves fresh basil
1 tsp Balsamic glaze (to taste)
Preparation
Step 1
Lightly toast baguette slices either in a toaster oven or in the oven (see note below).
Step 2
While the baguette slices are toasting, carefully cut the mozzarella up into ¼ inch cubes.
Step 3
Mix mozzarella pieces, camellia oil, quartered cherry tomatoes, and garlic salt together in a small bowl and set aside.
Step 4
Slice or cut basil into small pieces and set aside.
Step 5
When baguette slices are lightly toasted, remove from oven and let cool
Step 6
Once the bread is cooled, top each slice with about 1-2 tablespoons of the mozzarella and salsa mixture.
Step 7
Top the mozzarella, tomato and mango mixture with pieces of fresh basil.
Step 8
Drizzle balsamic glaze over each piece of assembled Caprese Bruschetta. Enjoy!
